Always walk to the right

Order of right of way:

1. Member

2. Hot Food

3. Drinks

4. Dirty Plates

When walking behind another server and you are carrying a tray call out

"Behind" so they know you are there and not to bump into you

Serve ladies at the table their plate first.  Always serve from the left to prevent knocking over a glass.  Clear from the right.  Changing hands accordingly so you do not reach across the members space with the back of your your arm is called the "Hug Method".  It is almost like you are hugging the member.

Use it or lose it.  Always ask members if they are finished with an item before clearing that item off the table.  Always replace silverware back if they are not 100% done with their meal.  Wipe down table with disposable wipes.

Restaurant Basics

  • Be Courteous to all employees
  • Look your best when you get to work
  • Safety is a top priority
  • Alert when walking behind
  • Never run in the restaurants
  • Wash hands frequently
  • Personal belongings are not allowed in restaurant
  • Stay busy throughout your shift

How to serve water

How to serve water at the table with a pitcher

-Fill pitchers of water with Ice (three scoops of ice)

-Do not cross in front of the members face

-Use the "Hug" method if needed to switch sides

-Be careful not to spill water or ice on floor

-Clean up spilt water so no one slips

-Clear from the right side not to elbow guests

-Use Three point system and stack plates securely

-Balance silverware so it does not fall

-Clear large plates and stack smaller on top

How to carry a tray

  • Balance glasses on tray evenly
  • Use strongest arm
  • Bend down to pick up
  • Spread fingers for support
  • Look forward to not run into anyone
